Purpose of Position:
To provide culinary guidance and support managing all aspects of a large-scale commercial food service operations including the planning of menu items, ordering fresh food and supplies. Preparing and cooking meals for various church wide events based on the church calendar providing remarkable service to all staff, ministries, members, guests of EBC and its entities which includes A Taste of Grace Food Truck and Indelible Impression Learning Center and EBC Cares Inc. Directs, supervises, trains, and oversees culinary activities maintaining compliance with The Food Code, ServSafe, Federal, State and local agencies.

Principal Responsibilities:
Accomplishes culinary human resource objectives:
Recruits, hires, trains, schedules, and directs culinary staff and volunteers
Communicates job expectations, and enforcing policies and procedures
Coordinates assignments of cooking personnel to ensure economical use of food and timely preparation
Supervise/coordinates activities of staff engaged in food preparation, cooking, garnishing, or presentation of food
Demonstrates new cooking techniques or equipment to staff
Participates industry training and development implementing new products and trends in food service

Meets culinary administrative duties, goals and financial objectives:

Establishes culinary operation annual goals exploring new and different opportunities to add value maintain quality and customer satisfaction
Estimates food and beverage costs and requisitions or purchases supplies
Monitors budgets and reviews financial transactions to ensure that expenditures are authorized and budgeted
Determines contractual selling prices and other details for food truck sales, catered ministry events and non-church events to include but not limited to weddings, repasts, birthday/anniversary events, live recordings, concerts etc.
Schedules and receives food and beverage deliveries and pickups, checking delivery contents to verify product quality and quantity
Participates in the required meetings
Controls cost, inventory levels, re-order points and storage requirements
Maintains food and equipment inventory records.
Arranges for equipment purchases or repairs

Maintains safe, secure, and healthy culinary work environment:

Inspects food and food preparation to maintain quality standards and sanitation regulations
Establishes standards and procedures for personnel performance and customer service.
Complies with sanitation, federal, state, and local legal regulations
Monitors compliance with health and fire regulations regarding food preparation and serving, and the dining facilities.
Obtains and maintain required operational permits from the various counties according to guidelines for posting
Inspect supplies, equipment, or work areas to ensure conformance to standards for permits inspections.
Directs the cleaning of the kitchen and other culinary areas.
Ensures staff maintains the required food handling certifications

Coordinates all culinary food services events and activities:
Plans and prepares menus working in conjunction with staff, ministry leaders and event coordinators etc. for scheduled events
Create event sheets, duty rosters, setups and develop contracts when necessary, detailing event specifics
Investigates and resolves food quality and service complaints.
Prepare and cook foods of all types, producing balanced meals with a variety of options
Ensures that the food in storage meets adequate levels of nutrition and sustenance
Inspect completed arrangements and set-up against event sheets created by staff, ministry leaders and/or event coordinator etc.

Qualifications/Knowledge

Education: Associate degree in Culinary Arts
3-5 years of management experience in high volume capacity
At least 5 years of experience in culinary management
Must have knowledge of large quantity meal preparation, menu planning
ServSafe and Nutrition certifications
Experience with event management software and Microsoft Office products
Physical Demands: Must be able to lift up to 50 pounds, work standing or walking for a full workday, and be capable of performing outside duties under all weather conditions occasionally
